Instructions
Preheat oven to 375 degrees F
Line a baking sheet with parchment paper and set aside
Peel, core and small dice apples and then put in a large bowl with lemon juice or ACV to prevent browning. Add the coconut milk, coconut sugar, vanilla and eggs to the mixture.
In a media bowl whisk flours, spices, salt, baking powder. Add dry ingredients to wet ingredients and whisk to combine.
Use a large serving spoon to scoop batter on to the baking sheet (Batter will be thick).
Bake fritters for 15-18 minutes at 375 degrees until edges are golden brown
Prepare Glaze
Melt coconut butter in the jar in the microwave before measuring. Add to a small bowl with coconut milk and maple syrup. Reheat in 2 second increments until glaze is flood consistency.
Let fritters cool for a few minutes before spooning glaze over each fritter. Let them set before eating.
Store leftovers in an airtight container at room temperature.
