To make these treats, start by gathering the necessary ingredients. You will need ripe apples, almond flour, tapioca flour, eggs, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, baking powder, and a pinch of salt.

These ingredients come together to create a flavorful batter that perfectly complements the sweetness of the apples.

Begin by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper. Then, peel and core the apples before cutting them into thin slices or small chunks, depending on your preference. In a large mixing bowl, combine the almond flour, coconut flour, cinnamon, nutmeg, baking powder, and salt.

In a separate bowl, whisk together the eggs, coconut milk, maple syrup, and vanilla extract until well combined. Slowly pour the wet ingredients into the dry mixture, stirring gently until a smooth batter forms. The batter should be thick enough to coat the apple slices but still pourable.

Tips for achieving the Best Fritters

  • Cut your apples small so they cook evenly and thoroughly
  • Use lemon juice or apple cider vinegar to prevent browning of your apples
  • Ensure your fritters are slightly cooled before adding glaze, otherwise it will melt off completely
  • always measure your coconut butter when it is softened in the jar (otherwise you will scoop off oil from the top of the jar!)
  • To make sure your glaze is not too thick/frosting like, add more coconut milk if necessary.

Ingredients
  

  • 1 Cup Apple (peeled and diced), (1 large apple)
  • 1/3 Cup coconut milk, canned, (or coconut yogurt)
  • 2 Large eggs
  • 2/3 Cup Coconut or granulated sugar of choice
  • 1 1/2 Cup almond flour
  • 1/2 Cup tapioca starch , (or arrowroot powder)
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 Cups refined melted coconut oil
  • 1 teaspoon vanilla extract

Glaze

  • 1/4 Cups maple syrup
  • 1/3 Cup coconut milk
  • 2-3 tbsp coconut butter , (melted to soften in jar before measuring)

Instructions
 

  • Preheat oven to 375 degrees F
  • Line a baking sheet with parchment paper and set aside
  • Peel, core and small dice apples and then put in a large bowl with lemon juice or ACV to prevent browning. Add the coconut milk, coconut sugar, vanilla and eggs to the mixture.
  • In a media bowl whisk flours, spices, salt, baking powder. Add dry ingredients to wet ingredients and whisk to combine.
  • Use a large serving spoon to scoop batter on to the baking sheet (Batter will be thick).
  • Bake fritters for 15-18 minutes at 375 degrees until edges are golden brown

Prepare Glaze

  • Melt coconut butter in the jar in the microwave before measuring. Add to a small bowl with coconut milk and maple syrup. Reheat in 2 second increments until glaze is flood consistency.
  • Let fritters cool for a few minutes before spooning glaze over each fritter. Let them set before eating.
  • Store leftovers in an airtight container at room temperature.
