For the Cookie dough
- 1/2 cup natural peanut butter
- 1/4 cup maple syrup, (Or honey if not vegan)
- 1/2 cup coconut milk, full fat
- 1-2 teaspoons vanilla extract
- 2 cups Gluten free quick cooking oats
- A pinch of sea salt, optional, but recommended
Chocolate topping
- Chocolate topping
- 1 cup semi-sweet chocolate
- 1/4 C peanut butter, microwave to soften
- 1 tbsp refined coconut oil
Prepare the base
In a saucepan over low heat, blend natural peanut butter, honey (or maple syrup), and coconut oil, stirring until smooth. Off the heat, mix in vanilla extract. Fold in the rolled oats until they’re thoroughly coated with the peanut butter mixture. Optionall—add a pinch of sea salt to enhance the flavors.
