Ingredients
  

Mini Fritters:

  • 1 Cup banana, diced (about 1 large banana)
  • 1/4 Cup maple syrup
  • 1/3 Cup canned coconut milk, or coconut yogurt
  • 2 Large eggs
  • 1/2 Cup coconut, maple, raw cane, or granulated sugar of choice
  • 1 Cup tapioca flour, or arrowroot
  • 1/2 Cup coconut flour
  • 1 Cup almond flour
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 Cup refined melted coconut oil
  • 1 teaspoon vanilla extract

Topping:

  • 3/4 Cup powdered sugar

Instructions
 

Preheat & Prepare:

  • Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan.

Mix Dry Ingredients:

  • In a large bowl, whisk together the tapioca flour, almond flour, coconut flour, nutmeg, baking powder, and salt.

Incorporate Wet Ingredients:

  • Stir in the melted coconut oil, eggs, coconut milk, maple syrup, and vanilla extract until a thick batter forms.

Fold in Bananas:

  • Gently fold in the diced bananas, ensuring even distribution throughout the batter.

Fill the Mini Muffin Pan:
