Mini Fritters:
- 1 Cup banana, diced (about 1 large banana)
- 1/4 Cup maple syrup
- 1/3 Cup canned coconut milk, or coconut yogurt
- 2 Large eggs
- 1/2 Cup coconut, maple, raw cane, or granulated sugar of choice
- 1 Cup tapioca flour, or arrowroot
- 1/2 Cup coconut flour
- 1 Cup almond flour
- 1/2 teaspoon nutmeg
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 Cup refined melted coconut oil
- 1 teaspoon vanilla extract
Mix Dry Ingredients:
In a large bowl, whisk together the tapioca flour, almond flour, coconut flour, nutmeg, baking powder, and salt.
Incorporate Wet Ingredients:
Stir in the melted coconut oil, eggs, coconut milk, maple syrup, and vanilla extract until a thick batter forms.
