- 1.5 cup white chocolate chips
Chocolate Inside Filling
- ½ cup chocolate chips, dark or semi-sweet
- ¼ cup full-fat coconut milk
- 2-3 tbsp coconut flour, to thicken
- Optional: 2-3 tbsp maple syrup, for added sweetness
Instructions
Prepare the Chocolate Filling:
- In a microwave-safe bowl or small saucepan, melt the chocolate chips and coconut milk together until smooth.
- Stir in coconut flour gradually until the mixture thickens to a scoopable consistency. Add maple syrup if desired.
- Place the mixture in the freezer for 15-20 minutes to firm up.
Make the Peanut Butter Shell:
- Melt the peanut butter and white chocolate chips together until smooth.
Assemble the Cups:
- Pour a layer of the peanut butter shell mixture into the bottom of a silicone mold or muffin liner.
- Scoop a small amount of the chilled chocolate filling and place it in the center.
- Cover with more peanut butter shell mixture to encase the filling completely.
Chill & Enjoy:
