Ingredients

Peanut Butter Shell

  • 1/2 or 2/3 cup peanut butter (to preference), smooth, natural
  • 1.5 cup white chocolate chips

Chocolate Inside Filling

  • ½ cup chocolate chips, dark or semi-sweet
  • ¼ cup full-fat coconut milk
  • 2-3 tbsp coconut flour, to thicken
  • Optional: 2-3 tbsp maple syrup, for added sweetness

Instructions

Prepare the Chocolate Filling:

  • In a microwave-safe bowl or small saucepan, melt the chocolate chips and coconut milk together until smooth.
  • Stir in coconut flour gradually until the mixture thickens to a scoopable consistency. Add maple syrup if desired.
  • Place the mixture in the freezer for 15-20 minutes to firm up.

Make the Peanut Butter Shell:

  • Melt the peanut butter and white chocolate chips together until smooth.

Assemble the Cups:

  • Pour a layer of the peanut butter shell mixture into the bottom of a silicone mold or muffin liner.
  • Scoop a small amount of the chilled chocolate filling and place it in the center.
  • Cover with more peanut butter shell mixture to encase the filling completely.

Chill & Enjoy:

  • Place in the freezer or fridge until firm (about 1 hour).
  • Once set, pop them out of the mold and enjoy!

Tips for the Best Results

  • Use a silicone mold for easy removal, but muffin liners in a pan work great too.
  • For a firmer filling, let the chocolate mixture freeze a bit longer before assembling.
  • Want extra crunch? Sprinkle chopped nuts or cacao nibs on top before chilling.
