Waffle Ice Cream Sandwiches

a delicious alternative to your classic ice cream sandwich!

Ingredients
  

  • 1 1/4 C almond flour
  • ¼ C coconut flour
  • C tapioca flour
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 1 C full fat coconut milk mixed with 2 tsp lemon juice, May substitute with dairy free milk of choice
  • 1/3 c refined liquid coconut oil
  • ¼ C Raw cane sugar or maple syrup
  • 1 tsp vanilla

Toppings

  • 1/3 C dye free sprinkles
  • 1/2 C dairy free chocolate chips

Instructions
 

Prepare the Waffles:

  • Follow the recipe for making mini waffles. Once cooked and cooled, add a scoop of your favorite ice cream between two waffles to form a sandwich.

Add Toppings:

  • Before the ice cream fully sets, sprinkle the edges with chocolate chips and dye-free sprinkles, pressing them gently into the ice cream to adhere.

Serve:

  • Enjoy these delightful treats as a perfect conclusion to a meal or a standalone snack during a hot day. They’re not only delicious but also a visually stunning addition to any gathering.
