For the Sugar Cookie Dough:
- 1 1/2 cups almond flour
- 1/3 cup Tapioca flour
- 1/2 cup monk fruit sugar, or other granulated sweetener
- 1/4 cup melted refined coconut oil, Or non hydrogens palm oil shortening
- 3 tbsp full-fat coconut milk, or almond milk
- 1 tsp vanilla extract
- 1/4 tsp almond extract, optional, for sugar cookie flavor
- Pinch of salt
- 1/4 C maple syrup
For Decoration:
- 1 cup white chocolate chips, melted
- 1/2 cup unsweetened shredded coconut
- Colored sprinkles for buttons, eyes, and mouth
- Orange sprinkle or candy for the nose
Step 1: Make the Sugar Cookie Dough
In a large mixing bowl, combine almond flour, coconut flour, monk fruit sugar, and salt.
Add melted coconut oil, coconut milk, vanilla extract, and almond extract. Mix until a soft dough forms. If the dough feels too dry, add 1-2 teaspoons of additional coconut milk.
Roll the dough into balls, making two sizes for each snowman: a larger ball for the body and a smaller ball for the head.
Step 2: Assemble the Snowmen
Stack the smaller dough ball on top of the larger one to form each snowman. Gently press them together to ensure they stick.
Place the assembled snowmen on a parchment-lined baking sheet and chill in the fridge for 15-20 minutes to firm up.
Step 3: Decorate
Melt the white chocolate chips in a microwave-safe bowl in 20-second increments, stirring between each, until smooth.
Spoon or drizzle the melted white chocolate over each snowman, covering them completely.
Immediately sprinkle shredded coconut over the white chocolate to create a “snowy” look.
Use colored sprinkles for the snowman’s buttons and eyes. Add an orange sprinkle or candy piece for the nose.
