For the Protein Bars:
- 2/3 cup creamy peanut butter of choice
- 1/4 cup maple syrup
- 1/2 cups vanilla protein powder of choice
- 2 tablespoons almond flour
- 2-3 tablespoons MCT oil or refined coconut oil, (depending on the consistency of your peanut butter)
For the Chocolate Topping:
- Dark chocolate chips
- 1 tbsp coconut oil
Step 1: Prepare the Protein Bars
In a large mixing bowl, combine the creamy peanut butter and maple syrup. Mix until smooth and well combined. If dough is too dry, add one more tbsp of coconut oil .— every protein powder is slightly different
Add the vanilla protein powder, almond flour, and MCT oil (or refined coconut oil) to the bowl. Stir until all ingredients are thoroughly mixed and form a thick dough.
Step 2: Prepare the Chocolate Layer
Melt the dark chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring between each interval until fully melted and smooth.
Pour the melted chocolate into the bottom of each cavity of a candy bar silicone mold, ensuring to coat the bottom and sides evenly. You can use a small brush or the back of a spoon to help spread the chocolate up the sides.
Step 3: Shape the Protein Bars
Once the chocolate is evenly spread in the mold, place the mold in the refrigerator for about 10 minutes to allow the chocolate to set slightly.
After the chocolate has set, evenly distribute the peanut butter dough into each cavity, pressing it down firmly to create a smooth, even layer.
