Peanut butter & chocolate bark (no bake, vegan, gluten free)

This Protein Peanut Butter Cup Bark is perfect for when you need a quick, healthy dessert that still feels indulgent. With the rich taste of dark chocolate, creamy peanut butter, and the added protein, this bark is as nutritious as it is delicious.

Ingredients
  

  • 1/2 cup peanut butter, softened in microwave until “runny”
  • 1-2 scoops vanilla protein powder, to taste
  • 1 1/2 cups dark chocolate chips
  • 2 tbsp refined coconut oil

Instructions
 

Prepare the Baking Sheet:

  • Line a baking sheet with parchment paper and set it aside.

Melt the Chocolate:

  • In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in the microwave in 30-second intervals, stirring between each, until fully melted and smooth.

Spread the Chocolate:

  • Pour the melted chocolate onto the parchment paper, spreading it evenly with a spoon or spatula to form a thin layer.

Prepare the Peanut Butter:

  • In a small microwave-safe bowl, soften the peanut butter for about 5 seconds until runny. Stir in the vanilla protein powder. If the peanut butter becomes too thick, add 1 tbsp of melted coconut oil to thin it out.

Create the Swirls:

  • Use a tablespoon to dollop the peanut butter mixture across the chocolate layer. Take a knife and swirl the peanut butter into the chocolate to create a beautiful marbled effect.

Freeze to Set:

  • Place the baking sheet in the freezer and allow the bark to set for 20-30 minutes, or until firm.

Break into Pieces:

  • Once set, break the bark into pieces.

  • Store the bark in an airtight container in the fridge to keep it fresh.
