Peanut butter & chocolate bark (no bake, vegan, gluten free)
This Protein Peanut Butter Cup Bark is perfect for when you need a quick, healthy dessert that still feels indulgent. With the rich taste of dark chocolate, creamy peanut butter, and the added protein, this bark is as nutritious as it is delicious.
- 1/2 cup peanut butter, softened in microwave until “runny”
- 1-2 scoops vanilla protein powder, to taste
- 1 1/2 cups dark chocolate chips
- 2 tbsp refined coconut oil
Prepare the Baking Sheet:
Melt the Chocolate:
In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in the microwave in 30-second intervals, stirring between each, until fully melted and smooth.
Prepare the Peanut Butter:
In a small microwave-safe bowl, soften the peanut butter for about 5 seconds until runny. Stir in the vanilla protein powder. If the peanut butter becomes too thick, add 1 tbsp of melted coconut oil to thin it out.
Break into Pieces:
Once set, break the bark into pieces.
