No bake monster cookies

These are the kinds of treats that feel indulgent but are secretly simple and nourishing. Keep a stash in your freezer and thank yourself later. I hope your whole family loves them as much as mine does!

Ingredients
  

  • 2 cups quick oats – You can pulse rolled oats a few times in a blender if needed.
  • 2/3 cup natural peanut butter – Creamy works best, but use what you love.
  • 1/4 cup coconut milk – Adds moisture and richness.
  • 1/2 cup maple syrup – For that natural sweetness.
  • 1/4 cup dye-free chocolate candies – Like Unreal, YumEarth, or your fave M&M-style alternative.

Instructions
 

  • .Warm it up: In a saucepan over low heat, stir together the peanut butter, maple syrup, and coconut milk until smooth.
  • Mix it in: Add the oats and stir until fully coated and combined.
  • Scoop and chill: Use a cookie scoop to portion onto a parchment-lined tray. Press in your candy-coated chocolates while the cookies are still soft.
  • Set: Chill in the fridge or freezer until firm—about 20–30 minutes.
