Ingredients
  

  • 1 C full fat coconut milk
  • 2.5 C frozen mangos
  • Lime juice and zest
  • 1/4 C maple syrup

Prepare the Ingredients:

  • Gather all your ingredients. Make sure the frozen mangoes are fully frozen for the best texture.

Blend:

  • In a high-speed blender or food processor, combine the full-fat coconut milk, frozen mangoes, lime juice, lime zest, and maple syrup. Blend until smooth and creamy, scraping down the sides as needed.

Adjust Sweetness:

  • Taste the mixture and adjust the sweetness if necessary by adding more maple syrup or lime juice to suit your preference.

Freeze:

  • Pour the blended mixture into a shallow, freezer-safe container. Cover the container with a lid or plastic wrap to prevent ice crystals from forming.

Stir:

  • Place the container in the freezer. After 30 minutes, stir the mixture thoroughly with a fork or whisk to break up any ice crystals. Repeat this process every 30 minutes for the next 2-3 hours until the ice cream is firm and creamy.

Serve:

  • Once the ice cream has reached the desired consistency, scoop it into bowls or cones. Garnish with additional lime zest for an extra zing if desired.
