Jack-o’-Lantern Sugar Cookies (Gluten-Free, Grain-Free)

For the Cookies:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup plus 1 tbsp tapioca starch
- 1/2 tsp baking powder
- 1/3 cup dairy-free non-hydrogenated shortening, softened (or sub softened refined coconut oil, or grass-fed butter)
- 1 egg
- 1 cup maple sugar, monk fruit sugar, or raw cane sugar (for a lighter color and neutral flavor)
- 1-2 tsp vanilla extract
- Splash of almond extract, to taste
For the Topping:
- 1/4 cup natural orange granulated sugar
Step 1: Prepare the Dough
Line a baking sheet with parchment paper.
In a medium-sized bowl, whisk together the almond flour, coconut flour, tapioca starch, and baking powder.
Step 2: Combine Wet Ingredients
In another bowl, whisk the softened shortening (or coconut oil/butter), egg, sugar, vanilla extract, and a splash of almond extract.
Using a hand mixer or electric mixer, beat the wet ingredients until well combined.
Step 5: Cut and Shape
Preheat your oven to 325°F.
Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness.
Use a pumpkin-shaped cookie cutter to cut out the jack-o’-lantern shapes. (If you don’t have one, you can simply use a round cutter and create the pumpkin face details with a knife.)
Sprinkle the natural orange granulated sugar over the tops of the cookies to create a festive, sparkly finish.
Step 7: Cool & Enjoy
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
