Gingerbread waffles

These Gingerbread Waffles are the ultimate festive breakfast or brunch idea for the holiday season. With their warm, spiced flavor and gorgeous toppings, they’ll bring holiday cheer to any table. Pair them with a hot cup of coffee or tea and enjoy the magic of the season.

For the Waffles:

  • 1 cup cassava flour
  • 1/3 cup coconut flour
  • Dash of salt
  • 1 tsp cinnamon
  • 1/2 tsp each of cloves, allspice, and nutmeg
  • 1 tsp ginger
  • 1.5 tsp baking powder
  • 1 1/4 cups coconut milk
  • 2 large eggs
  • 1 tbsp molasses
  • 1/2 cup Avocado Oil (I used Madhava foods), +1 tbsp for grilling
  • 1/3 cup Organic Coconut Sugar

For Topping:

  • Powdered sugar, optional
  • Maple syrup or agave syrup
  • Optional: Sugared cranberries for an extra festive touch

  • How to Make Gingerbread Waffles

Step 1: Preheat the Waffle Iron

  • Turn on your mini or large waffle iron to preheat while you prepare the batter.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the cassava flour, coconut flour, coconut sugar, baking powder, spices (cinnamon, ginger, nutmeg, cloves, and allspice), and salt.

Step 3: Add Wet Ingredients

  • Stir in the coconut milk, molasses, and beaten eggs until combined. Gradually mix in the avocado oil, being careful not to overmix the batter.

Step 4: Grill the Waffles

  • Lightly oil your waffle iron with 1 tbsp of avocado oil. Scoop about 1/4 cup of batter into the waffle iron (adjust for larger waffles) and spread it evenly with the back of a spoon. Close the lid and cook for 2-3 minutes, or until the waffles reach your desired crispness.

Step 5: Serve & Enjoy

  • Dust the waffles with powdered sugar, top with sugared cranberries, and drizzle generously with maple syrup. Serve immediately for the ultimate holiday treat
