Instructions
How to Make Gingerbread Waffles
Step 1: Preheat the Waffle Iron
Turn on your mini or large waffle iron to preheat while you prepare the batter.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together the cassava flour, coconut flour, coconut sugar, baking powder, spices (cinnamon, ginger, nutmeg, cloves, and allspice), and salt.
Step 3: Add Wet Ingredients
Stir in the coconut milk, molasses, and beaten eggs until combined. Gradually mix in the avocado oil, being careful not to overmix the batter.
Step 4: Grill the Waffles
Lightly oil your waffle iron with 1 tbsp of avocado oil. Scoop about 1/4 cup of batter into the waffle iron (adjust for larger waffles) and spread it evenly with the back of a spoon. Close the lid and cook for 2-3 minutes, or until the waffles reach your desired crispness.
Step 5: Serve & Enjoy
Dust the waffles with powdered sugar, top with sugared cranberries, and drizzle generously with maple syrup. Serve immediately for the ultimate holiday treat
