Cookie dough ice cream bites
These Cashew Butter Cookie Dough Ice Cream Bites are sure to be a hit with everyone who tries them. Enjoy them as a refreshing snack or a delightful dessert.
Ice Cream Bites:
- 3/4 cup cashew butter, (or almond butter)
- 1.5 cup Canned coconut milk , (may sub with a high fat dairy free milk yogurt of choice)
- 1 teaspoon vanilla extract
- 1/2 C maple syrup
- 1/2 cup mini chocolate chips
- 1/2-3/4 cup Vegan vanilla protein powder
Prepare the Ice Cream Mixture:
In a food processor, combine the cashew butter, coconut milk, vanilla extract. Blend until smooth and creamy.
Stir in the mini chocolate chips by hand to evenly distribute them throughout the mixture.
Form the Ice Cream Bites:
Using a mini silicone brownie pan, spoon the cashew butter cookie dough ice cream mixture into each cavity, smoothing the tops.
Sprinkle the remaining mini chocolate chips on top of each filled cavity.
Freeze the ice cream bites for about 2 hours or until firm.
Top and Serve:
Once the ice cream bites are firm, remove them from the silicone pan.
If desired, drizzle with melted chocolate for an extra touch of decadence.
Serve immediately or store in the freezer until ready to enjoy.
