Cinnamon roll snack cake

Ingredients
  

Ingredients:

For the Cake:

  • 1 1/2 cups oat flour
  • 1 1/2 cups almond flour
  • 2/3 cup coconut or raw cane sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup coconut milk or coconut yogurt
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla extract
  • 3 large eggs

For the Cinnamon Swirl:

  • 1/3 cup coconut sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted coconut oil

For the Cream Cheese Glaze:

  • 1/2 cup dairy-free cream cheese, softened
  • 1/3 cup honey
  • 2 tbsp Coconut milk , or any plant-based milk
  • 1/2 tsp vanilla extract

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.

Prepare the Cake Batter:

  • In a large mixing bowl, combine the oat flour, almond flour, coconut sugar, baking powder, baking soda, salt, and ground cinnamon. Mix well.

Wet Ingredients:

  • In another bowl, whisk together the coconut milk (or coconut yogurt), melted coconut oil, maple syrup, vanilla extract, and eggs until smooth.

Combine Ingredients:

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

Prepare the Cinnamon Swirl:

  • In a small bowl, combine the coconut sugar, ground cinnamon, and melted coconut oil until you have a thick, crumbly mixture.

Assemble the Cake:

  • Pour the cake batter into the prepared baking dish. Sprinkle the cinnamon swirl mixture evenly over the batter. Then use a knife to gently swirl it into the batter.

Bake:

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan.
  • Prepare the Cream Cheese Glaze:
  • In a medium bowl, whisk together the softened dairy-free cream cheese, powdered sugar, almond milk, and vanilla extract until smooth.

Glaze the Cake:

  • Once the cake has cooled, drizzle the cream cheese glaze over the top. Use a spatula or the back of a spoon to spread it evenly.

Serve and Enjoy:

  • Cut the cake into squares and serve. Enjoy the comforting flavors of cinnamon roll in every bite!
