Chocolate waffle bark

Ingredients
  

Waffle Batter

  • 1 cup almond flour
  • 1/2 cup tapioca starch
  • 1/3 cup grass-fed whey protein powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup refined coconut oil, melted and room temp
  • 3-4 tbsp coconut or maple sugar, optional
  • 1/2 cup dairy-free milk, almond, soy, flax, coconut, etc.
  • 2 eggs
  • Topping Ingredients:
  • 1 cup chocolate chips, dark, semi-sweet, or dairy-free
  • 1 tbsp coconut oil
  • Toppings: sprinkles, chopped nuts, shredded coconut, or sea salt

Instructions
 

Make the Waffles:

  • Preheat the waffle iron.
  • In a large bowl, whisk together almond flour, tapioca starch, protein powder, baking powder, and salt.
  • In another bowl, whisk melted coconut oil, sugar (if using), dairy-free milk, and eggs.
  • Combine wet and dry ingredients to form a batter.
  • Cook in the waffle iron until golden and crispy. Let cool slightly, then cut into triangles.

Assemble the Bark:

  • Line a baking sheet with parchment paper and arrange waffle triangles.
  • Melt chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth.
  • Drizzle melted chocolate over waffle pieces and add toppings.
  • Freeze for 20-30 minutes until chocolate is set.

Serve:

  • Break into pieces and enjoy! Store in an airtight container in the fridge or freezer.
