Topping Ingredients:

chocolate chips

dark, semi-sweet, or dairy-free

Toppings: sprinkles

chopped nuts, shredded coconut, or sea salt
Instructions
Make the Waffles:
Preheat the waffle iron.
In a large bowl, whisk together almond flour, tapioca starch, protein powder, baking powder, and salt.
In another bowl, whisk melted coconut oil, sugar (if using), dairy-free milk, and eggs.
Combine wet and dry ingredients to form a batter.
Cook in the waffle iron until golden and crispy. Let cool slightly, then cut into triangles.
Assemble the Bark:
Line a baking sheet with parchment paper and arrange waffle triangles.
Melt chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth.
Drizzle melted chocolate over waffle pieces and add toppings.
Freeze for 20-30 minutes until chocolate is set.
Serve:
Break into pieces and enjoy! Store in an airtight container in the fridge or freezer.
