  • 1/3 cup plain dairy-free yogurt or full-fat coconut milk
  • 2 tablespoons refined coconut oil or avocado oil
  • 1/4 cup maple syrup
  • 1/3 cup coconut sugar, raw cane sugar, or maple sugar
  • 2 eggs, room temperature

For the Glaze:

  • 2-3 tablespoons softened coconut butter
  • 1/3 cup full-fat coconut milk
  • 1/4 cup powdered sugar, organic or monk fruit for a sugar-free option
  • Christmas-themed sprinkles

Instructions
 

Prepare the Batter:

  • Preheat and lightly oil your waffle iron.
  • In a small bowl, mix the coconut milk with a splash of lemon juice and let it sit for several minutes to create a dairy-free “buttermilk.”
  • In a separate bowl, whisk together the eggs, maple syrup, and chosen sugar until well combined. Stir in the “buttermilk” mixture.
  • In another bowl, combine the almond flour, coconut flour, tapioca starch, baking powder, and nutmeg.
  • Gradually add the dry ingredients to the wet mixture, stirring until a smooth batter forms.

Cook the Donut Waffles:

  • Spoon or pipe the batter into the preheated waffle iron, leaving a small hole in the center if you desire a donut shape.
  • Allow the batter to puff up slightly before gently closing the waffle iron.
  • Cook for at least 3 minutes, or until the waffles are light golden brown. Ensure you re-oil the waffle iron between batches to prevent sticking.

Prepare the Glaze:

  • In a small bowl, combine the softened coconut butter, full-fat coconut milk, and powdered sugar. Mix until smooth and well combined.

Glaze and Decorate:

  • Once the waffles have cooled slightly but are still warm, dip each one gently into the glaze.
  • Place the glazed waffles on a cooling rack and immediately sprinkle with Christmas-themed sprinkles for a festive touch.
