Ingredients
  

For the Cobbler Batter:

  • 1/2 cup almond flour
  • 1/4 cup tapioca starch
  • 1/4 cup maple, raw cane, or coconut sugar (to taste)
  • 1/4 tsp baking powder
  • 2-3 tablespoons dairy-free milk, (use 2 for more dough like cobbler, 3 for more cake/batter like)
  • 2 tablespoons softened or melted refined coconut oil , Or Non hydrogenated palm oil shortening , or butter

For the Apple Filling:

  • 1 medium tart apple, peeled if desired, cored, and chopped (Granny Smith or Honeycrisp work well)
  • 1 teaspoon cinnamon
  • 1-2 tablespoons coconut or raw cane sugar, depending on desired sweetness

For the Caramel Sauce:

  • 1/4 cup cashew butter
  • 1/4 cup maple syrup
  • 1/4 cup full-fat coconut milk

Instructions
 

Step 1: Prepare the Apple Filling

  • In a small microwave-safe bowl, combine the chopped apples, cinnamon, and sugar. Stir to coat the apples evenly with the cinnamon and sugar mixture. Microwave on high for 2-3 minutes, or until the apples are tender and slightly softened. Set aside.

Step 2: Make the Cobbler Batter

  • In a separate bowl, mix together the almond flour, tapioca starch, sugar, dairy-free milk, and melted coconut oil. Stir until a smooth batter forms. This batter will be thick but spreadable, perfect for layering over the apples.

Step 3: Assemble the Cobbler

  • Divide the cooked apple filling between two small microwave-safe ramekins or mugs. Spoon the cobbler batter over the apples, spreading it evenly to cover the fruit.

Step 4: Microwave the Cobbler

  • Microwave each cobbler separately on high for 1-2 minutes, or until the batter has puffed up and set. The cooking time will vary depending on your microwave, so keep an eye on it. The cobbler topping should be firm and slightly golden around the edges.

Step 5: Make the Caramel Sauce

  • While the cobblers are cooking, prepare the caramel sauce. In a small saucepan over medium heat, whisk together the cashew butter, maple syrup, and coconut milk. Stir continuously for about 3-5 minutes, until the mixture is smooth and thickened to a caramel consistency. If it thickens too much, you can add a splash of coconut milk to thin it out.

Step 6: Drizzle & Serve

  • Once the cobblers are ready, drizzle the warm caramel sauce generously over the top of each cobbler. Serve immediately, and enjoy the warm, gooey goodness!
