Ingredients

- 1 1/2 cups almond flour
- 1/3 cup Tapioca flour
- 1/2 cup monk fruit sugar, or other granulated sweetener
- 1/4 cup melted refined coconut oil, Or non hydrogens palm oil shortening
- 3 tbsp full-fat coconut milk, or almond milk
- 1 tsp vanilla extract
- 1/4 tsp almond extract, optional, for sugar cookie flavor
- Pinch of salt
- 1/4 C maple syrup
For Decoration:
- 1 cup white chocolate chips, melted
- 1/2 cup unsweetened shredded coconut
- Colored sprinkles for buttons, eyes, and mouth
- Orange sprinkle or candy for the nose
Instructions
Step 1: Make the Sugar Cookie Dough
- In a large mixing bowl, combine almond flour, coconut flour, monk fruit sugar, and salt.
- Add melted coconut oil, coconut milk, vanilla extract, and almond extract. Mix until a soft dough forms. If the dough feels too dry, add 1-2 teaspoons of additional coconut milk.
- Roll the dough into balls, making two sizes for each snowman: a larger ball for the body and a smaller ball for the head.
Step 2: Assemble the Snowmen
- Stack the smaller dough ball on top of the larger one to form each snowman. Gently press them together to ensure they stick.
- Place the assembled snowmen on a parchment-lined baking sheet and chill in the fridge for 15-20 minutes to firm up.
Step 3: Decorate
- Melt the white chocolate chips in a microwave-safe bowl in 20-second increments, stirring between each, until smooth.
- Spoon or drizzle the melted white chocolate over each snowman, covering them completely.
- Immediately sprinkle shredded coconut over the white chocolate to create a “snowy” look.
- Use colored sprinkles for the snowman’s buttons and eyes. Add an orange sprinkle or candy piece for the nose.
Step 4: Let Set
- Return the snowmen to the fridge for another 10-15 minutes, or until the white chocolate has hardened.
