Fudge Base:

  • 2/3 cup creamy cashew butter
  • 1/4 cup full-fat coconut milk
  • 1/3-1/2 cup maple syrup
  • 5 tbsp refined coconut oil
  • 1/3 cup coconut flour

Toppings:

  • 1/3 cup vegan caramel sauce, DM me for an easy recipe!
  • 1/3 cup roasted peanuts
  • 1/3 cup chocolate chips

Instructions
 

Prepare the Fudge Base:

  • Heat the cashew butter and coconut oil in the microwave until melted and smooth. Stir in the maple syrup, coconut milk, and vanilla extract until fully combined.

Cool and Mix:

  • Let the fudge base cool completely. Once cooled, stir in the coconut flour until it’s thick and dough-like.

Freeze the Base Layer:

  • Pour the fudge mixture into a loaf pan lined with parchment paper, smoothing it out evenly. Place in the freezer for 20 minutes to set.

Add the Toppings:

  • Remove the pan from the freezer and drizzle the caramel sauce over the fudge layer. Sprinkle the roasted peanuts and chocolate chips evenly on top.

Set the Fudge:

  • Return the pan to the freezer and let the fudge set for 1-2 hours.

Slice and Serve:

  • Once fully set, slice the fudge into squares. Store in the fridge or freezer to keep it fresh.
