Servings 1

Ingredients

  • 2 tbsp almond flour
  • 2 tbsp tapioca starch
  • 1 tbsp almond butter
  • 1 tbsp maple syrup
  • 1 tbsp coconut or raw cane sugar
  • Splash of vanilla extract
  • Handful of chocolate chips
  • 1 egg yolk
  • 1 tbsp refined coconut oil

Instructions

Prep Your Dish

  • Preheat your oven to 350°F (175°C). Lightly grease a small ramekin or oven-safe dish with a bit of coconut oil. Alternatively, use a microwave-safe dish if you’re short on time and want to cook it in the microwave.

Mix the Wet Ingredients

  • In a small bowl, combine the almond butter, maple syrup, coconut or raw cane sugar, vanilla extract, egg yolk, and melted coconut oil. Mix well until smooth.

Add the Dry Ingredients

  • Add the almond flour and tapioca starch to the bowl, stirring until a thick batter forms.

Fold in the Chocolate Chips

  • Gently fold in a handful of chocolate chips for those irresistible melty pockets of goodness.

Bake or Microwave

  • Oven Method: Transfer the batter to your prepared ramekin. Bake for 10-12 minutes or until the edges are set and the center is slightly soft.
  • Microwave Method: Cook on high for 45-60 seconds, checking at intervals to ensure it doesn’t overcook.

Cool Slightly & Enjoy

  • Allow the blondie to cool for a minute before digging in. This helps it set and enhances the gooey texture.
