Giant “monster” no bake monster cookie (Gluten free vegan)

No-Bake Monster Cookie (Single Serve, Bakery-Style)

Meet the cookie that needs no oven, no chill time (unless you want it), and no apologies. This monster-sized no-bake cookie is thick, chewy, naturally sweetened, and loaded with chocolate chips and dye-free M&Ms — and it holds together like a dream.

If you’ve ever wanted a no-bake treat that actually feels like a bakery cookie (not a soft truffle or an energy bite), this one’s for you. It’s bold. It’s colorful. And it’s made with just a few pantry staples.

Why You’ll Love This Recipe:

  • Just 6 Ingredients – Nothing complicated here. Everything might already be in your pantry.
  • No Baking Required – Keep the oven off and still enjoy a cookie that feels indulgent.
  • Kid-Approved + Mom-Approved – My girls devour these, and I love knowing exactly what’s in them.
  • Gluten-Free + Naturally Sweetened – No flour, no refined sugar, just wholesome sweetness from maple syrup and coconut sugar alternatives.

  • 1/3 cups quick oats – You can pulse rolled oats a few times in a blender if needed.
  • 2 Tbsp natural peanut butter – Creamy works best, but use what you love.
  • 1 Tbsp coconut milk – Adds moisture and richness.
  • 2-3 Tbsp maple syrup – For that natural sweetness
  • 2 tbsp dye-free chocolate candies – Like Unreal, YumEarth, or your fave M&M-style alternative.
  • 2tbsp C Chocolate chips dairy free

Instructions

  • .Warm it up: In a saucepan over low heat, stir together the peanut butter, maple syrup, and coconut milk until smooth.
  • Mix it in: Add the oats and stir until fully coated and combined. Let it sit for 5-10 minutes to cool slightly. Fold in 2/3 of the candies and chocolate chips.
  • Scoop and chill: Use a cookie scoop to portion your giant cookie onto a parchment-lined plate. Press in the rest of your candy-coated chocolates & chocolate chips while the cookies are still soft.
  • Set: Chill in the fridge or freezer until firm—about 20–30 minutes.
