- 1/2 teaspoon salt
- 1 1/2 cups almond flour
- 1/3 cup tapioca starch
- 1/2 cup dairy-free white chocolate chips
- 1/2 cup craisins
Frosting and Topping:
- 1/3 cup coconut butter
- 1/2 cup dairy-free or regular cream cheese, substitute full-fat coconut milk or cream for a dairy-free option
- 1/4 cup maple syrup
- 1 teaspoon orange zest
- 1/3 cup craisins, roughly chopped
- 1/2 cup dairy-free white chocolate chips and 1 tbsp coconut oil, melted
Instructions
For the Bars:
- Preheat the oven to 350°F (175°C) and lightly grease a 9-inch square brownie pan.
- In a large bowl, beat the softened butter or coconut oil with the coconut sugar until well combined.
- Mix in the egg, egg yolk, orange zest, vanilla extract, and ground ginger.
- Add the almond flour, tapioca starch, baking powder, and salt. Stir or beat until the dough is thoroughly combined.
- Fold in the white chocolate chips and craisins.
- Spread the batter evenly in the prepared pan and bake for 15 to 20 minutes, until the edges are golden brown but the center is still soft to the touch.
