Ingredients
  

Bars:

  • 1/2 cup softened butter or refined coconut oil, measured solid
  • 2/3 to 3/4 cup coconut sugar
  • 1 egg, plus 1 yolk
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups almond flour
  • 1/3 cup tapioca starch
  • 1/2 cup dairy-free white chocolate chips
  • 1/2 cup craisins

Frosting and Topping:

  • 1/3 cup coconut butter
  • 1/2 cup dairy-free or regular cream cheese, substitute full-fat coconut milk or cream for a dairy-free option
  • 1/4 cup maple syrup
  • 1 teaspoon orange zest
  • 1/3 cup craisins, roughly chopped
  • 1/2 cup dairy-free white chocolate chips and 1 tbsp coconut oil, melted

Instructions
 

For the Bars:

  • Preheat the oven to 350°F (175°C) and lightly grease a 9-inch square brownie pan.
  • In a large bowl, beat the softened butter or coconut oil with the coconut sugar until well combined.
  • Mix in the egg, egg yolk, orange zest, vanilla extract, and ground ginger.
  • Add the almond flour, tapioca starch, baking powder, and salt. Stir or beat until the dough is thoroughly combined.
  • Fold in the white chocolate chips and craisins.
  • Spread the batter evenly in the prepared pan and bake for 15 to 20 minutes, until the edges are golden brown but the center is still soft to the touch.
  • Remove from the oven and let cool completely.

For the Frosting:

  • In a medium bowl, combine the dairy-free cream cheese (or coconut milk) and maple syrup until well combined.
  • Add the softened coconut butter and orange zest, stirring until smooth and creamy.
  • Stir in the chopped craisins.

Topping:

  • Spread the frosting evenly over the cooled bars.
  • Melt the white chocolate chips and coconut oil over a double boiler or in the microwave in 30-second intervals until smooth.
  • Drizzle the melted white chocolate over the frosting.
  • Sprinkle additional chopped craisins on top.
