  • 1.5 cup Canned coconut milk , (may sub with a high fat dairy free milk yogurt of choice)
  • 1 teaspoon vanilla extract
  • 1/2 C maple syrup
  • 1/2 cup mini chocolate chips
  • 1/2-3/4 cup Vegan vanilla protein powder

Instructions
 

Prepare the Ice Cream Mixture:

  • In a food processor, combine the cashew butter, coconut milk, vanilla extract. Blend until smooth and creamy.
  • Stir in the mini chocolate chips by hand to evenly distribute them throughout the mixture.

Form the Ice Cream Bites:

  • Using a mini silicone brownie pan, spoon the cashew butter cookie dough ice cream mixture into each cavity, smoothing the tops.
