Twix Waffles (Gluten and Dairy Free)

Chocolate-covered waffles are my new favorite way to eat waffles! Add a rich caramel layer, and you’ve got yourself the best treat!! Also—be sure to try them chilled straight from the fridge—extra fabulous that way. 🤤

Recipe: Twix Waffles

Ingredients:

• Almond Flour: A perfect gluten-free alternative that gives these waffles a nutty flavor and a light, fluffy texture. It’s also high in protein and healthy fats. • Coconut Flour: Adds a subtle sweetness and enhances the texture of the waffles. Coconut flour is rich in fiber and works well in gluten-free baking. • Tapioca Flour: Helps to bind the ingredients together and gives the waffles a chewy texture, reminiscent of traditional flour-based waffles. • Baking Powder: Essential for giving the waffles their rise and fluffiness. • Salt: Enhances the flavors and balances the sweetness.

• Eggs, beaten: Provides structure and helps bind the ingredients together, giving the waffles their classic texture. • Full-Fat Coconut Milk mixed with Lemon Juice: Adds richness and moisture. The lemon juice acts as a buttermilk substitute, giving a slight tang and improving the texture. • Refined Liquid Coconut Oil: Adds moisture and a subtle coconut flavor without the heaviness of other oils. It’s also a healthier fat option. • Raw Cane Sugar or Maple Syrup: Adds sweetness. Maple syrup is a great natural sweetener that complements the nutty flavors of the almond and coconut flours. • Vanilla Extract: Adds a warm, aromatic flavor that enhances the overall taste of the waffles. • Almond Extract: Adds a subtle, nutty flavor that pairs beautifully with the almond flour.

Topping:

• Chocolate Chips: Provides the rich, chocolatey coating that makes these waffles feel like a decadent dessert.
• Coconut Oil: Helps to melt the chocolate smoothly and gives it a glossy finish.

Caramel Layer:
• Cashew Butter: Adds a creamy, nutty flavor and is the base for the paleo caramel.
• Maple Syrup: Natural sweetener that adds depth and richness to the caramel.
• Coconut Milk: Adds creaminess to the caramel, making it smooth and luscious.

Ingredients
  

Dry Ingredients:

  • 1 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 2/3 cup tapioca flour
  • 1.5 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients:

  • 2 eggs, beaten
  • 1 cup full-fat coconut milk mixed with 2 tsp lemon juice, May substitute with dairy-free milk of choice
  • 1/3 cup refined liquid coconut oil
  • 1/4 cup raw cane sugar or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

Topping:

  • 1.5 cups chocolate chips
  • 2 tbsp coconut oil

Caramel Layer:

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut milk

Instructions
 

Preheat and Prep:

  • Preheat mini waffle iron and oil generously with coconut or olive oil.

Mix Dry Ingredients:

  • In a large bowl, mix all dry ingredients. Melt coconut oil and stir into dry mixture. Form a well in the center.

Combine Wet Ingredients:

  • Add beaten eggs, coconut milk, and maple syrup to the well. Mix everything together to form your batter. If the batter looks too thick, add another tbsp of milk.

Cook Waffles:

  • Scoop a generous serving spoon of batter onto your waffle iron. Use the bottom of the spoon to spread the batter slightly. Cook for 2 minutes, or 3 for a crispier waffle.

Prepare Toppings:

  • While waffles are grilling, prepare the chocolate coating by microwaving the chocolate chips and coconut oil (or boil on the stovetop over hot water). Prepare the caramel layer by mixing cashew butter, maple syrup, and coconut milk until smooth.

Cool and Coat:

  • Line a baking sheet with parchment paper
