  • 1/3 C tapioca starch
  • 1/2 cup granulated sweetener, like monk fruit or erythritol for a low-sugar option
  • 1.5 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup melted refined coconut oil
  • 1/3 cup unsweetened full fat coconut milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Coconut butter glaze

    • 1/4 cup coconut butter
    • 2 tablespoons maple syrup, adjust based on sweetness preference
    • 2-3 tablespoons almond or coconut milk, or more, for desired consistency
    • 1 teaspoon vanilla extract

    For Topping:

    • 2-3 tbsp Natural rainbow sprinkles

    Instructions
     

    Prepare the Donut Waffle Batter:

    • In a large mixing bowl, combine almond flour, tapioca flour, coconut flour, granulated sweetener, baking powder, and the manufacturer’s instructions. Lightly grease it with a bit of coconut oil to prevent sticking.

    Cook the Donut Waffles:

    • Pour enough batter into the center of the waffle iron to cover the waffle plates, typically about 1/4 cup, depending on the size of your waffle iron. Close the lid and cook until the waffle is golden and slightly crisp, about 4-5 minutes. Remove the waffle carefully and repeat with the remaining batter.

    Make the Coconut Butter Glaze:

    • In a small saucepan over low heat, melt the coconut butter with maple syrup and vanilla extract. Gradually add almond milk, whisking continuously, until the glaze is smooth and reaches your preferred consistency.

    Assemble the Glazed Donut Waffles:

    • Place the cooked waffles on a serving plate. Drizzle the warm coconut butter glaze over the waffles, ensuring each one is well-coated.
