This addition transforms each bite from a simple treat into a fuel source, perfect for post workout, or an afternoon pick me up, or satisfying hunger between meals.

Assembling the bites

1. Prepare the Protein-Enriched Base: Whisk together the high-protein vegan yogurt, a scoop of plant-based protein powder, a splash of maple syrup or agave, and a dash of vanilla extract. The goal is a creamy, well-balanced base that’s both flavorful and nutrient-dense.

2. Layer the Textures: In silicone molds or an ice cube tray, start with a layer of the protein-yogurt mixture. drizzle with vegan caramel sauce for a touch of sweetness then add roasted peanuts . Freeze until just firm. Then add the melted chocolate on top.

Protein Snickers Frozen Yogurt Bites

Made with healthy ingredients and packed with protein, these bites are the perfect snack to satisfy your sweet tooth without the added sugar rush.

Equipment

  • 1 mini silicone muffin pan

Ingredients
  

Yogurt Base:

  • 1 1/3 cups dairy-free yogurt (choose a thick variety for best result
  • 4 tablespoons maple syrup
  • 1/3 C cashew butter
  • 2 scoops vanilla protein powder, optional for a protein boost
  • 1 teaspoon vanilla extract

Caramel sauce:

  • 1/4 C maple syrup
  • 1/4 cup peanuts, roughly chopped
  • 1/4 cup full fat coconut milk)
  • 1/4 Cups coconut sugar
  • dash salt

Chocolate topping

  • 1 cups dairy free chocolate (use a no refined sugar brand if desired)
  • 1 tbsp refined coconut oil

Instructions
 

Prepare the Yogurt Mixture:

  • In a medium bowl, combine dairy-free yogurt, maple syrup, coconut sugar, protein powder (if using), and vanilla extract. Stir until well mixed and smooth.

Make the Caramel Sauce:

  • In a small saucepan, heat coconut milk and , maple syrup, cashew butter & coconut sugar and a dash of salt over medium heat. Allow the mixture to simmer, stirring frequently, until it thickens into a caramel-like sauce, approximately 5-7 minutes. Remove from heat and let it cool.

melt the chocolate

  • In a microwave safe bowl, combine chocolate chips and coconut oil. Microwave for 30-60 seconds, checking on it at the 30 second marks stir until smooth

Assemble the Bites:

  • Spoon a small amount of the yogurt mixture into each cup of a mini muffin pan, filling each about one-third of the way. Freeze for about 30 minutes, or until just set.
  • Remove the pan from the freezer and drizzle a bit of caramel sauce over the first layer, then add a sprinkle of chopped peanuts. Freeze again for about 15 minutes.
  • Next, drizzle a layer of the melted chocolates evenly on top.

Freeze Until Firm:

  • Place the mini muffin pan back in the freezer and freeze the yogurt bites until they are completely firm, at least 2 hours or overnight.

Serving:

  • Once fully frozen, gently remove the bites from the muffin pan. They may be stored in an airtight container in the freezer for up to a month.
