Single Serve Powdered Sugar Microwave Donut (Grain-Free, Dairy-Free)

Sometimes all you need is one. One fluffy, warm, sweet little donut. And this one? It’s made in a ramekin, right in the microwave, in under 2 minutes.
I used my shortcake base (because why mess with perfection?) and cut a silicone donut mold to fit snugly inside a ramekin. It’s the easiest way to get that classic donut shape without pulling out a pan or preheating the oven.

Single serve powdered sugar donut
Ingredients
- 1/2 tbsp coconut flour
- 2 tbsp tapioca starch
- 1/4 C almond flour
- 1/4 tsp baking powder
- 3-4 tbsp maple syrup
- 1 tbsp full-fat coconut milk or yogurt
- 1 tbsp avocado or coconut oil
- 1 tbsp whisked egg
- 1 tsp vanilla extract
- 1 –2 tsp organic powdered sugar, for topping
Instructions
- In a small bowl, whisk all ingredients except powdered sugar until smooth.
- Grease your ramekin and line it with a trimmed silicone donut mold (or pour directly in for a donut cake-style finish).
- Microwave on high for 60–80 seconds, or until the center is just set.
- Let cool slightly, then pop it out.
- Dust generously with powdered sugar. Serve warm!
