Single Serve Powdered Sugar Microwave Donut (Grain-Free, Dairy-Free)

Sometimes all you need is one. One fluffy, warm, sweet little donut. And this one? It’s made in a ramekin, right in the microwave, in under 2 minutes.

I used my shortcake base (because why mess with perfection?) and cut a silicone donut mold to fit snugly inside a ramekin. It’s the easiest way to get that classic donut shape without pulling out a pan or preheating the oven.

Single serve powdered sugar donut

Prep Time 5 minutes
Servings 1

Ingredients
  

  • 1/2 tbsp coconut flour
  • 2 tbsp tapioca starch
  • 1/4 C almond flour
  • 1/4 tsp baking powder
  • 3-4 tbsp maple syrup
  • 1 tbsp full-fat coconut milk or yogurt
  • 1 tbsp avocado or coconut oil
  • 1 tbsp whisked egg
  • 1 tsp vanilla extract
  • 1 –2 tsp organic powdered sugar, for topping

Instructions
 

  • In a small bowl, whisk all ingredients except powdered sugar until smooth.
  • Grease your ramekin and line it with a trimmed silicone donut mold (or pour directly in for a donut cake-style finish).
  • Microwave on high for 60–80 seconds, or until the center is just set.
  • Let cool slightly, then pop it out.
  • Dust generously with powdered sugar. Serve warm!
