This Single-Serve Vegan Monkey Bread brings all the flavor and warmth of traditional monkey bread in a vegan, grain-free version that’s easy to whip up any time. Enjoy the comforting flavors of cinnamon and coconut with every bite!

Ingredients
  

Dough

  • 1/4 cup almond flour
  • 1/3 cup tapioca starch
  • 1 tbsp coconut flour
  • 1/4 tsp baking powder
  • 3 tbsp almond flax milk, or any plant-based milk
  • 1 tbsp refined coconut oil, melted
  • 1 1/2 tbsp Raw cane or coconut sugar

Coconut simple syruo

  • 2 tbsp coconut sugar
  • 2 tbsp water

coconut butter glaze

  • 2 tbsp powdered sugar
  • 1/2 tbsp coconut butter, softened
  • 1 tsp almond flax milk, or any plant-based milk
  • 1/8 tsp vanilla extract

Instructions
 

Step 1: Prepare the Dough

  • Combine Dry Ingredients: In a small bowl, mix together the almond flour, tapioca starch, coconut flour, and baking powder.
  • Add Wet Ingredients: Stir in the almond flax milk, sugar, and melted coconut oil until a soft dough forms. If the dough feels too dry, add a tiny bit more almond flax milk until it holds together.

Step 2: Form the Dough Balls

  • Portion the Dough: Pinch off small pieces of dough and roll them into small balls, about the size of a marble (1/2-inch). You should get around 5-6 small balls.

Step 3: Make the Coconut Simple Syrup

  • Prepare the Syrup: In a microwave-safe bowl, combine the coconut sugar and water. Microwave in 30-second intervals, stirring in between, until the sugar dissolves and the mixture thickens slightly (about 1 minute). Set aside.

Step 4: Assemble and Microwave

  • Assemble in a Ramekin: Place the dough balls into a single microwave-safe ramekin, layering them slightly. Drizzle the coconut simple syrup over the dough balls.
  • Microwave: Microwave on high for 1 minute, or until the monkey bread is cooked through and puffed. Microwave times may vary, so check after 1 minute and continue in 15-second increments if needed. Don’t overcook

Step 5: Make the Coconut Butter Glaze

  • Prepare the Glaze: In a small bowl, whisk together the powdered sugar, softened coconut butter, almond flax milk, and vanilla extract until smooth. Add a bit more milk if you prefer a thinner glaze.

Step 6: Glaze and Serve

  • Drizzle the Glaze: Once the monkey bread is slightly cooled, drizzle the coconut butter glaze over the top.
