For the Grain-Free Fudge Grahams:
- 1.5 cups almond flour
- 1/4 cup tapioca flour
- 1/4 cup coconut oil or palm shortening, softened
- 1/4 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- Pinch of salt
- ~1/2 cup dark chocolate chips, for dipping
For Assembly:
- Marshmallows, regular or vegan
- Flaky sea salt, optional
Instructions
Make the graham cookies:
- Preheat oven to 350°F.
- Mix all ingredients into a soft dough.
- Roll or press out the dough and cut into squares or rectangles.
- Bake on a parchment-lined tray for 10–12 minutes until edges are golden. Cool completely.
Dip in chocolate:
- Melt chocolate chips until smooth.
- Dip half of each graham cookie in chocolate.
- Place on parchment and chill until set.
Build your s’mores:
- Toast marshmallows to your liking (oven, torch, or even air fryer works).
- Sandwich between two fudge-dipped grahams.
- Sprinkle with sea salt if desired.
