Cookies and Cream Granola

Ingredients
  

  • 2 cups gluten-free rolled oats
  • 1/2 cup chocolate or vanilla vegan protein powder
  • 1/4 cup black cocoa powder
  • 1/4 cup refined coconut or avocado oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips

Instructions
 

Preheat Oven:

  • Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

Mix Dry Ingredients:

  • In a large bowl, combine the gluten-free oats, protein powder, and cocoa powder. Mix until well combined.

Add Wet Ingredients:

  • Stir in the maple syrup, vanilla extract, and oil. Once mixed, add half of the white chocolate chips and stir again until everything is well combined.

Spread and Press:

  • Spread the granola mixture onto the prepared baking sheet. Use a spatula to press it down into an even layer. This helps the granola to clump together as it bakes.

Bake:

  • Bake for 15 minutes. Remove from the oven and immediately sprinkle the remaining white chocolate chips on top. The heat from the granola will melt the chips slightly, creating delicious pockets of sweetness. Let the granola cool completely.

Break and Store:

  • Once cooled, break the granola into pieces. If you like, you can add a few more white chocolate chips for extra indulgence. Store the granola in an airtight container to keep it fresh and crunchy.
