For the Grain-Free Fudge Grahams:

  • 1.5 cups almond flour
  • 1/4 cup tapioca flour
  • 1/4 cup coconut oil or palm shortening, softened
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt
  • ~1/2 cup dark chocolate chips, for dipping

For Assembly:

  • Marshmallows, regular or vegan
  • Flaky sea salt, optional

Instructions
 

Make the graham cookies:

  • Preheat oven to 350°F.
  • Mix all ingredients into a soft dough.
  • Roll or press out the dough and cut into squares or rectangles.
  • Bake on a parchment-lined tray for 10–12 minutes until edges are golden. Cool completely.

Dip in chocolate:

  • Melt chocolate chips until smooth.
  • Dip half of each graham cookie in chocolate.
  • Place on parchment and chill until set.

Build your s’mores:

  • Toast marshmallows to your liking (oven, torch, or even air fryer works).
  • Sandwich between two fudge-dipped grahams.
  • Sprinkle with sea salt if desired.
