This single-serve oatmeal creme pie is a delicious way to celebrate Pi Day with a homemade treat that’s indulgent yet made with better-for-you ingredients!

For the Oatmeal Cookie:

  • 1/2 cup almond flour
  • 1/2 cup gluten-free rolled or quick oats
  • 1/2 teaspoon baking powder
  • 2 tablespoons coconut milk, or any dairy-free milk
  • 2 tablespoons maple syrup
  • 4 tablespoons coconut sugar or brown sugar
  • Splash of vanilla extract

For the Creme Filling:

  • 1/2 cup powdered sugar
  • 1 tablespoon full-fat coconut milk
  • 1-2 tablespoons coconut butter, (May sub softened vegan butter)

Instructions
 

Make the Cookie:

  • Preheat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  • In a bowl, mix together the almond flour, gluten-free oats, and baking powder.
  • Stir in the coconut milk, maple syrup, coconut sugar, and vanilla extract until a thick cookie dough forms.
  • Divide the dough in half and shape it into two cookies, flattening them slightly as they will not spread much during baking.
  • Bake for 10-12 minutes, or until the edges are golden brown. Let cool completely before adding the filling.

Make the Creme Filling:

  • In a small bowl, mix together the powdered sugar, coconut milk, and coconut butter until smooth and creamy. Add more coconut milk if needed for a spreadable consistency.

Assemble the Oatmeal Creme Pie:

  • Spread the creme filling onto the bottom of one cooled cookie, then place the second cookie on top, gently pressing them together to form a sandwich.
  • Enjoy immediately or chill for 10-15 minutes for a firmer texture!
