Ingredients
Ingredients:
Dry Ingredients:
- 1 cup oat flour, blend gluten-free oats into flour in a high-speed blender
- 1/2 cup coconut flour
- 1 tsp baking powder
- 1/2 tsp baking soda
Wet Ingredients:
- 2/3 cup full-fat coconut milk, or substitute with your preferred creamy milk
- 1/3-1/2 cup coconut sugar, adjust to taste*
- 1/4 cup maple syrup
- 1/3 cup refined coconut oil, or melted butter*
- 2 large eggs + 1 egg yolk
- 1 tsp vanilla extract
Topping:
- 1/2 cup monk fruit powdered sugar or organic powdered sugar
Instructions
Preheat the Oven:
- Preheat your oven to 375°F. Generously oil a nonstick or silicone donut pan to ensure the donuts release easily once baked.
Mix the Dry Ingredients:
- In a large bowl, mix the oat flour, coconut flour, baking powder, and baking soda. Sift through the ingredients to remove any clumps for a smooth batter.
Mix the Wet Ingredients:
- In a separate bowl, whisk together the coconut milk, eggs, egg yolk, maple syrup, vanilla extract, and coconut sugar. Make sure the ingredients are well combined.
Combine Wet and Dry Ingredients:
- Slowly pour the wet mixture into the dry ingredients, stirring until combined. Then, fold in the melted coconut oil. The batter should be thick but still pourable.
Fill the Donut Pan:
- Spoon the batter into the donut molds, filling each about 3/4 full. Tap the donut pan gently on the counter to remove any air bubbles and ensure even baking.
Bake the Donuts:
- Place the donut pan in the preheated oven and bake for 15-18 minutes or until the edges are golden brown. Insert a toothpick into one of the donuts—if it comes out clean, they’re ready!
Prepare the Powdered Sugar:
- While the donuts are baking, whisk together the monk fruit powdered sugar or organic powdered sugar for the topping.
Cool and Coat the Donuts:
- Once the donuts are done, carefully carve them out of the pan with a spatula. Let them cool for a few minutes. While they’re still slightly warm, dip each donut generously into the powdered sugar mixture, making sure they are well-coated for that perfect sugary finish.
