Single serve chocolate chip cookie
Ingredients
- 1/2 cup almond flour
- 3 tbsp tapioca or arrowroot starch
- 1/4 tsp baking powder
- 1 tbsp maple syrup
- 3 tbsp maple or coconut sugar, or regular raw cane sugar
- 1 tbsp full-fat coconut milk , or milk of choice
- Splash of vanilla extract
- Sprinkling of sea salt to taste
- 1/3 cup vegan chocolate chips
Instructions
Preheat:
- Preheat your oven to 350°F (175°C) and line a small baking tray with parchment paper.
Mix Dry Ingredients
- In a small bowl, combine the almond flour, tapioca starch, baking powder, and a sprinkling of sea salt.
Add Wet Ingredients:
- Add the maple syrup, coconut sugar, coconut milk, and vanilla extract to the dry mixture. Stir until a dough forms. It should be slightly sticky but moldable.
Fold in Chocolate Chips:
- Gently fold in the vegan chocolate chips, ensuring they are evenly distributed throughout the dough.
Shape the Cookie:
- Form the dough into a ball and place it onto the prepared baking tray. Flatten it slightly into a round cookie shape (about 1/2 inch thick).
Bake:
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The center will be slightly soft, but it will firm up as it cools.
Cool & Enjoy:
- Allow the cookie to cool on the tray for 5 minutes before enjoying. Sprinkle with a bit more sea salt if desired for that perfect sweet-salty balance.
