Cinnamon Toast Crunch (Grain Free, Vegan)

Bringing back all the childhood memories of your favorite cereal-- in a healthier and less processed form.

Using mostly almond flour to give these a buttery and toasty flavor, with a bit of tapioca starch for a crisp texture.

Prep is super easy:

  • Combine dough in a mixer or food processor
  • Roll out dough between 2 pieces of parchment paper
  • Cut into tiny squares
  • Bake for 10 minutes
  • Let cook and enjoy!

Cinnamon Toast Crunch (Grain Free, Vegan)

Ingredients
  

Dough

  • 1.5 C Almond Flour
  • 1/4 C tapioca Starch
  • 1/4 C maple syrup
  • 2 tbsp refined coconut oil (softened)
  • 1/3 or 1/2 C coconut or raw cane sugar
  • 1 tsp cinnamon
  • dash salt

Topping

  • 3 tbsp coconut sugar
  • 1 tsp cinnamon

Instructions
 

Prepare the Dough

  • Preheat the oven – Set your oven to 350°F (175°C) and allow it to fully preheat while you prepare the dough.
  • Mix the ingredients – In a food processor or electric stand mixer, combine the flour, coconut sugar, oil, cinnamon, and maple syrup. Mix on medium speed until the ingredients come together to form a smooth, pliable dough. If the dough feels too dry, add a teaspoon of water or maple syrup to help it bind.
  • Roll out the dough – Place the dough between two sheets of parchment paper to prevent sticking. Use a rolling pin to roll it out evenly to about 1/4-inch thickness.
  • Cut into small squares – Using a sharp knife or a pizza cutter, cut the dough into small squares, approximately 1/2-inch in size. Carefully separate the pieces to ensure even baking.
  • Transfer to a baking sheet – Using a spatula, carefully move the dough squares onto a lined baking sheet, spacing them about 1/2 inch apart to allow for even cooking.
  • Brush and sprinkle – Lightly brush the tops of the squares with melted coconut oil or vegan butter. Then, sprinkle a mix of cinnamon and coconut sugar evenly over the surface.
  • Bake – Place the baking sheet in the preheated oven and bake for 9-10 minutes, or until the edges start to turn a golden brown. Keep an eye on them to prevent burning.
  • Cool and serve – Once baked, remove the tray from the oven and let the cereal squares cool completely on a wire rack. For extra sweetness, sprinkle a bit more coconut sugar on top.
  • Enjoy! – Serve in a bowl with your milk of choice, and enjoy your homemade, crispy, cinnamon-sweet cereal!
