Apple fritter bread (grain & dairy free)
Ingredients
For the Loaf:
- 1/2 cup coconut flour
- 1/2 cup tapioca flour, plus 2 tbsp for apple mixture
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2/3 cup coconut or raw cane sugar
- 1/4-1/2 tsp nutmeg, to taste
- 3 large eggs
- 2/3 cup coconut milk or yogurt mixed with 1 tsp lemon juice
- 1/4 cup melted refined coconut oil, may substitute with avocado oil or butter
For the Apple Filling:
- 1.5 cups apples, about 2, diced into 1/4 inch pieces
- 2 tsp lemon juice
- 1 tbsp tapioca starch
Cinnamon Sugar Mixture for Apples:
- 1/4 cup coconut, monk fruit, or maple sugar
- 1 tsp cinnamon
For the Coconut Butter Glaze:
- 3 tbsp coconut butter
- 1/3 cup full-fat coconut milk
- 1/4 cup maple syrup
Instructions
- Preheat your oven to 350 degrees. Line a large loaf pan with parchment paper.
- Prepare the apple filling: In a small bowl, stir diced apples with lemon juice. Sprinkle cinnamon, sugar, and extra tapioca starch on top, and stir to combine.
- Combine the dry ingredients: In a large bowl, mix coconut flour, tapioca flour, almond flour, baking powder, baking soda, coconut or raw cane sugar, and nutmeg. Form a well in the center of the dry ingredients.
- Mix the wet ingredients: Add the coconut milk (or yogurt) and eggs into the well in the dry ingredients. Stir to form a batter. Then, add the melted coconut oil and mix until fully incorporated.
- Assemble the loaf: Pour half of the batter into the prepared loaf pan and top with half of the apple mixture. Pour the remaining batter on top and then add the rest of the apple mixture and the cinnamon sugar mixture.
- Bake for 38-40 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the coconut butter glaze: While the loaf is baking, melt the coconut butter with maple syrup and coconut milk, whisking to combine until smooth.
- Glaze the loaf: Once the loaf is baked and slightly cooled, pour the glaze over the warm bread.
- Slice and enjoy: Serve warm or at room temperature.
