salted caramel s’mores (grain & dairy free)

Ingredients you’ll need

•   Homemade grain-free vegan graham crackers (or just use regular store bought gluten free!) 
•   Vegan marshmallows
•   Dairy-free homemade salted caramel sauce
•   Sea salt flakes

Salted caramel S’mores

Ingredients
  

For the Graham Crackers:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup coconut sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract

For the S’mores:

  • Homemade grain-free vegan graham crackers
  • marshmallows
  • Sea salt flakes

For the Caramel Sauce:

  • 1/2 cup cashew butter
  • 1/2 cup full-fat coconut milk
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar

Instructions
 

Make the graham crackers

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the almond flour, tapioca flour, coconut sugar, cinnamon, baking soda, and a pinch of salt.
  • In a separate bowl, mix together the softened coconut oil, maple syrup, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  • Place the dough between two sheets of parchment paper and roll it out to about 1/8-inch thickness.
  • Remove the top sheet of parchment paper and use a rectangle cookie cutter to cut the dough into rectangles.
  • Transfer the parchment paper with the cut dough onto the baking sheet.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow the crackers to cool completely on the baking sheet before breaking them into individual pieces.

Make the caramel sauce

  • In a small saucepan, combine the cashew butter, full-fat coconut milk, maple syrup, and coconut sugar.
  • Cook over medium heat, stirring constantly, until the mixture thickens and becomes a smooth caramel sauce, about 10-15 minutes.
  • Remove from heat and let it cool slightly before using.

Assemble the s’mores

  • Preheat your oven to 350°F (175°C) or prepare a campfire for roasting marshmallows.
  • Break the homemade grain-free vegan graham crackers into rectangles if they are not already pre-cut.
  • Spread a generous amount of homemade caramel sauce on top of one graham cracker rectangle.
  • Sprinkle a pinch of sea salt flakes over the caramel.
  • Roast a vegan marshmallow over the campfire until golden brown and gooey, or place the marshmallow​⬤ a baking sheet and toast in the preheated oven for a few minutes until soft.
  • Place the roasted marshmallow on top of the caramel.
  • Top with another graham cracker rectangle to complete the s’more.
  • Repeat the process for as many s’mores as desired.
  • Serve immediately and enjoy these decadent and delicious salted caramel s’mores with friends and family!
