Cookies and Cream Granola
Ingredients
- 2 cups gluten-free rolled oats
- 1/2 cup chocolate or vanilla vegan protein powder
- 1/4 cup black cocoa powder
- 1/4 cup refined coconut or avocado oil
- 1/3 or 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup white chocolate chips
Instructions
Preheat Oven:
- Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
Mix Dry Ingredients:
- In a large bowl, combine the gluten-free oats, protein powder, and cocoa powder. Mix until well combined.
Add Wet Ingredients:
- Stir in the maple syrup, vanilla extract, and oil. Once mixed, add half of the white chocolate chips and stir again until everything is well combined.
Spread and Press:
- Spread the granola mixture onto the prepared baking sheet. Use a spatula to press it down into an even layer. This helps the granola to clump together as it bakes.
