Cookie Dough Granola (gluten free & vegan)

To create the cookie dough, I use almond and tapioca flour for its fine texture and buttery flavor, which makes an excellent grain-free base. Combining it with coconut milk, oil, and a dash of vanilla extract replicates that beloved classic cookie dough taste.
The granola itself has added plant protein , and some cashew butter to help it clump together. You can use either maple syrup or date syrup.
Cookie Dough granola
Ingredients
Granola base
- 2 C Gf rolled oats, pulsed in blender
- 1/2 C vegan vanilla protein powder
- 1/4 C melted refined coconut or avocado oil
- 3 tbsp runny cashew or almond butter
- 1/3 C maple or date syrup
- 1 tsp vanilla
- 1/2 tsp almond extract
Cookie dough:
- 1.5 C almond flour
- 1/2 tapioca starch
- 4 tbsp maple syrup
- 1/3 C coconut sugar
- 3 tbsp refined coconut oil, softened
- 2/3 C chocolate chips
- 2 tbsp coconut milk, full fat
Instructions
Prepare the granola base;
- Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
- In a large bowl, combine all dry ingredients
- In a small bowl, melt coconut oil and cashew butter and maple syrup. Stir and then add in vanilla extract.
- Pour wet ingredients into dry and stir to incorporate and combine.
- Pour granola on to baking sheet. Press down in an even layer. Bake 13-15 minutes until light golden brown.
Prepare cookie dough:
- Prepare cookie dough ingredients in a medium bowl. Stir to combine dough.
- Let granola cool then add in small pieces of cookie dough—use your hands or a spatula to break up granola and combine with the cookie dough. Add more chocolate chips after it cools.
- Store in airtight container in the fridge!
